Brain Booster Salad with Almonds

Ingredients List:

  • 2 cups Fresh Spinach
  • 1 cup Red and Green Chard
  • 1 cup Baby Kale
  • 1 Avocado, peeled and cubed
  • 1 cup Fresh Strawberries, sliced
  • ½ cup Blanched Slivered Almonds, toasted
  • ½ cup Fresh Blueberries
  • ½ cup Mandarin Oranges (canned or fresh)
  • ½ cup Red Onion, thinly sliced

  • Honey Balsamic Dressing (optional)
  • ¼ cup Balsamic Vinegar
  • ¼ cup Pure Honey
  • ¼ cup Olive Oil
  • 1 tablespoons Dijon Mustard
  • A bright spring salad full of brain boosting ingredients like strawberries, blueberries, almonds, and baby kale. 


    1. For this recipe, you will need a cutting board, sharp knife, colander, saute pan, measuring cup/spoons, mason jar, and mixing bowl.

    2. Begin by rinsing your greens and fruits. Next, toast the Blanched Slivered Almonds over medium heat for about 5 minutes on the stove, set aside to let cool. Slice the red onion, avocado, strawberries, and drain the mandarin oranges.

    3. Rinse greens, fruit, and drain the mandarin oranges.

    4. Toast the Blanched Slivered Almonds on the stove, over medium heat, for about five minutes - stirring occasionally.
      Set aside to let cool.

    5. Slice the onion, avocado, and strawberries.

    6. Mix all of the ingredients in a large bowl. Serve with honey balsamic dressing.

    7. Honey Balsamic Dressing:
      In a mason jar or airtight container, add vinegar, honey, mustard, and olive oil - replace lid and shake vigorously.

    Tip: Try this salad with any toasted Nuts, and pair with Sunflower Seeds and Dried Cranberries for even more brain food!
