Dairy Free Mac and Cheese

Dairy Free Mac and Cheese can be a person's dream if they are following a dairy-free lifestyle. Many of those who choose dairy-free living may be struggling with the loss of cheese in their diet and may be seeking a good cheese replacement that allows them to enjoy some of their favorite meals like pizza and mac and cheese. Directions
Preheat oven to 350 degrees - if you're choosing to roast your cauliflower this is a good time to prepare it. You can place it in the oven while you work on the rest of your recipe.
Prepare pasta according to package directions. Drain and set aside.
Using a high powered blender or Vitamix machine add cashews, lemon juice, salt, water, nutritional yeast, spices, mustard, and garlic clove. Start on low and work to the highest speed. Place pasta in a large bowl. Mix in the cheese sauce and set to the side.
In a skillet use coconut oil, butter, or olive oil to sauté the mushrooms and spinach until soft.
Toss the mushrooms, spinach, and cauliflower with the pasta, then place in an 8x8 baking dish. Garnish with a little pepper if desired.
Place in oven and bake at 350 degrees for 20 minutes. Allow to cool for about 5 minutes before serving.
The cheese sauce makes it hard to believe that there is no cheese in the recipe. It tastes almost identical to a traditional mac and cheese with cheese sauce. It is really flavorful, and the addition of vegetables add texture and enjoyment to every bite.
