Ingredients List:

  • 1 cup organic, unbleached all purpose flour
  • 1 cup organic whole wheat flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Dash ground nutmeg
  • 2 tablespoons cold, organic butter, cut into small pieces
  • 1 cup pumpkin puree
  • ¾ cup plus 1 tablespoon low fat buttermilk

  • A substantial cookie with a unique pecan pumpkin flavor.

    Directions

    1. Preheat oven 425 degrees F. Combine flours, sugar, baking powder, baking soda, salt, and nutmeg in a bowl, stirring with a whisk; cut in butter with a pastry knife until mixture resembles coarse meal.

    2. Combine pumpkin, and buttermilk in a bowl, stirring with a whisk.  Add pumpkin mixture and Eatnuts.com Small Pecan Pieces to flour mixture, stirring until just combined.

    3. Drop biscuit batter in mounds of ⅓ cupfuls onto baking sheet coated with cooking spray. Bake at 425 for 14 minutes or until golden.

    4. Serve warm with cinnamon butter or honey butter.
