Pecan Sweet Potato Mash
A holiday favorite with creamy sweetness and flavor, pecans add a soft crunch to every bite!
Pre-heat oven at 350 degrees. Poke holes into sweet potatoes or yams and place them on a baking sheet lined with parchment paper.
Bake sweet potatoes or yams for 55-70 minutes, until they are soft all the way through.
Allow sweet potatoes or yams to cool and then peel the skin off.
Chop sweet potatoes into medium pieces and place either in a food processor or high powered blender like a Vitamix machine along with maple syrup, brown sugar, orange juice, salt, cinnamon, coconut milk, and butter. Process until it becomes creamy and smooth.
Place mashed sweet potatoes or yams into a pan (8 x 8 x 2 inch)
