  • 1 bunch curly kale
  • 1½ pears or apples
  • 2 pomegranates or 2 cups berries

  • 2 cups cooked quinoa
  • 2 cups garbanzo beans

  • ½ pear
  • 4 tablespoons tahini
  • 2 lemons or limes, juiced
  • 2 tablespoons avocado oil or olive oil
  • Salt and pepper to taste

    Directions

    1. Rinse kale. Separate stems, using only the leaves.

    2. Deseed pomegranates and use only the seeds, or rinse the berries, and dice pears.

    3. Cook quinoa and set to the side to cool.

    4. Place all salad ingredients including the quinoa and garbanzo beans in a large bowl.

    5. Place all dressing ingredients in a Vitamix machine for best results, or in a blender. Blend on high until completely liquefied.

    6. Pour dressing over salad. Toss salad together until well covered.

    7. You can store the salad with the dressing in the refrigerator to eat later or simply enjoy right away.
