Directions
In a food processor process the Eatnuts.com Dates until they form a ball. Remove the ball and place to the side. Next, process the nuts into a meal. Place the Eatnuts.com Dates back into the food processor, add a pinch of salt and continue to process until a loose dough begins to form. The texture is right when you squeeze it between your fingers, and it sticks together. If the dough is too dry, add dates, and if it is too wet add more Eatnuts.com Walnuts.
In a 12 count muffin pan, slightly grease each section, then place a small piece of parchment paper in the bottom of each cup. This preparation is for easy removal of the Cheesecake Bites after they are frozen.
Place about 1 tablespoon of crust into each cup, and press down with your fingers or use the bottom of a glass. Set in the freezer and allow crust to firm up.
In a blender or Vitamix machine puree the filling ingredients until silky smooth. Add more lemon, agave or coconut milk if necessary for a smooth consistency.
Pour filling evenly into the cups and tap the pan a few times on countertop to release air bubbles. Cover with plastic wrap and freeze for 4-6 hours until hard.

It is almost impossible to tell that these raw cheesecake bites are dairy free. The lemon juice combined with the cashews and agave make it taste just like cheesecake. The walnuts and dates are so fluffy and make a delicious crust for this wonderfully delicious raw dessert.
