Rosemary Spiced Almonds
Roasting your own nuts lets you not only control which ingredients that you put into a recipe, but it also refines your management over the flavors you want from the nuts. Preheat oven to 325 degrees.
Pour oil into small saucepan on med-low heat or until warm. Be careful, as the oil can get too hot and burn.
Add chopped rosemary and thyme and allow to get warm for about 1 minute.
Remove the pan from the heat and stir in the cumin and cayenne powder.
Pour flavored oil over the nuts and spread evenly.
Sprinkle with sugar, salt and pepper and stir again.
Transfer to a baking sheet for 15 minutes and bake, stirring after the first 10 minutes.
Let cool and store in an air tight container for up to two weeks.
