Pistachio Goat Cheese Spread
A creative take on the classic cheese ball, featuring delicious pistachio nuts!
For this recipe, you will need a mixing bowl, a spice grinder, measuring spoons/cups, plastic wrap, scissors, and a mixing spoon.
Place room temperature cream cheese and goat cheese into a mixing bowl. Chop ¼ cup of your Eatnuts.com Shelled Raw Pistachios and place them in with the cheese, along with chives and remainder of the spices. Mix until thoroughly blended. Form into a ball and cover with plastic wrap, refrigerate for at least an hour.
Once the cheese has set up, remove from the refrigerator and unwrap from the plastic. Gently shape into the form of a pear, smoothing out the surface. Re-wrap it with the plastic and return to the fridge so the surface can set up again.
While the cheese sets up in the fridge, place the remaining Eatnuts.com Shelled Raw Pistachios in a spice grinder and pulse until almost a fine powder. Remember to pulse, otherwise you'll have pistachio butter - and, while delicious, isn't what we're going for!
Place the powder into a bowl or plate and remove the cheese from the refrigerator. Unwrap it from the plastic and roll into the pistachio powder, gently pressing it in until it is completely coated in the beautiful green pistachio dust.
For finishing touches, cut about an inch off of a thin cinnamon stick with scissors. Place it inside the top of the pear to act as a stem and fix a small bay leaf to the side for the pear leaf.
