Hawaiian Fruit & Nut Bread

Ingredients List:

  • ¾ cups all-purpose gluten free flour
  • ½ cup Eatnuts.com Almond Flour
  • ¼ cup coconut flour
  • 2 mashed bananas
  • ½ cup crushed pineapple
  • ⅓ cup coconut sugar or brown sugar
  • 2 whole flax eggs
  • (1 egg = 1 tablespoon ground flax seed +
  • 3 tablespoons water. Combine and let set for 5 minutes.)
  • ¼ cup Eatnuts.com Homemade Almond Milk
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup Eatnuts.com Macadamia Nuts
  • ⅓ cup chopped Eatnuts.com Dried Pineapple
  • ⅓ cup chopped Eatnuts.com Dried Mango
  • ⅓ cup coconut, flaked or shredded

    1. Grease a 9” x 5” pan and preheat oven to 350 degrees.

    2. Combine crushed pineapple, flax eggs, and bananas in a medium bowl.

    3. In a separate bowl combine flours, salt, baking soda, baking powder, and sugar. Stir these dry ingredients into the wet ingredients.

    4. Gradually stir in Eatnuts.com Homemade Almond Milk and vanilla.

    5. Fold in chopped dried fruit, coconut, and Eatnuts.com Macadamia Nuts.

    6. Pour into baking pan and bake for 45-50 minutes.

    7. Cool and serve.
