Ingredients List:

  • 1 ¼ cups coconut oil
  • 1 ¼ cups coconut sugar
  • 1 cup brown sugar
  • 2 flax eggs (1 tablespoon flaxseed meal plus 3 tablespoons water. Allow to sit for 10 minutes.) or 2 eggs (non-vegan option)
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • 1 ½ teaspoon baking soda
  • 1 ½ baking powder
  • 2 cups gluten-free flour
  • 1 cup coconut flour

  • 6 ounces chocolate chips

    Directions

    1. Preheat oven to 375 degrees.

    2. In a medium bowl cream together oil, coconut sugar and brown sugar.

    3. Add in eggs, vanilla and mix together.

    4. Sift dry ingredients together in a separate bowl. Gradually stir dry ingredients into oil/sugar mixture. Continue to mix until combined well.

    5. Fold in the chocolate chips and Eatnuts.com Chopped Walnuts, then finish mixing dough with hands.

    6. Place tablespoon-sized drops onto a baking sheet and bake for 9-15 minutes.

    7. Remove from oven and allow to cool.
