Ingredients List:

  • 3-4 garlic cloves
  • 2-3 tablespoons coconut oil
  • 2 large eggs
  • ¼ cup Sun Dried Tomatoes chopped into slices (not in oil)
  • ⅛ - ¼ cup goat cheese crumbles
  • salt and pepper to taste
  • 1-2 teaspoons Italian Seasoning Blend
  • 1 cup baby spinach
  • ⅛ cup diced green onions
  • 2 tablespoons coconut creamer or almond milk
  • A healthy goat cheese omelette to start the day with many different flavors and textures from several of the traditional foods found in many Mediterranean dishes.


    1. In a small dish, mix together eggs, coconut creamer, salt and pepper to taste and half of the Italian seasoning.

    2. On medium heat, melt down ½ the amount of coconut oil and sauté the green onions, garlic, and Sun Dried Tomatoes for 1 - 2 minutes until they begin to soften. Then add in spinach and sauté for an additional 1-2 minutes until wilted.

    3. Place sautéed mixture into a side dish and add more coconut oil to the plan on medium heat. Then pour in egg mixture and allow to slowly cook. As the egg begins to harden a bit, add the omelet mixture on top along with the goat cheese and fold over half the omelette.

    4. You will know it’s ready when the eggs are fully cooked through, the goat cheese has melted and the outside has turned a golden brown.

    5. Enjoy alone or serve alongside some home cooked potatoes or your favorite toasted bread.

The combination of the creamy goat cheese, tangy Sun Dried Tomatoes and spinach are enhanced with the fresh garlic and green onions. It is almost impossible to just have one bite and quite inviting to add some toast or potatoes into each spoonful. This is simply the best breakfast and high protein breakfast out there.
