Ingredients List:

  • ½ cup chopped onion
  • 2 cloves of garlic
  • 1 cup mushrooms
  • 2 tablespoons olive oil
  • ⅓ cup Eatnuts.com Walnuts
  • ¼ cup packed cilantro
  • 1 teaspoon salt
  • ¾ teaspoon ground cumin
  • 1 teaspoon paprika
  • ¾ cup cooked rice or quinoa
  • 1¾ cups cooked lentils
  • 1 tablespoon tomato paste
  • Olive oil for cooking
  • Directions

    1. In a skillet, sauté onions, garlic, and mushrooms with olive oil.

    2. Once caramelized, mix with the Eatnuts.com Walnuts, cilantro, salt, cumin, and paprika in a food processor.

    3. Once combined thoroughly, add in the rice or quinoa, the lentils, and tomato paste, then pulse a few times until well combined.

    4. Shape the mixture into 6 large patties tightly. Heat oil in a skillet over medium-high heat.

    5. Cook patties in the skillet for 5 minutes per side. Enjoy your burgers in a hamburger bun or serve on top of a bed of greens.
