  • 1 cup fresh or frozen mangos
  • ½ cup coconut cream or milk
  • ¼ cup Eatnuts.com Raw Macadamia Nuts
  • ¼ cup coconut oil

  • For Assembly

  • 2 mangos, chopped, or ¼ pineapple or a combination of both
  • ¼ cup unsweetened dried coconut
  • This Paradise Fruit Parfait is a healthy parfait recipe that uses nondairy yogurt. It is perfect for someone who is interested in eating raw food because all the ingredients are raw. It is a tropical experience for the taste buds as this fruit parfait is filled with tropical ingredients like pineapple, coconut, and macadamia nuts, making it a real tropical experience for your taste buds!     Directions

    1. Combine all Paradise Crumble ingredients in a Vitamix machine or food processor until crumbly. If using a Vitamix machine make sure to run it on low, keeping the texture chunky. Place in a bowl and cover.

    2. To make the pudding, blend the pudding ingredients in a Vitamix machine or blender until everything is fully blended and almost liquefied. Chill the pudding in the refrigerator for at least 2-4 hours.

    3. Use four small Mason jars to assemble the parfait. In each jar put a layer of paradise crumble, then a layer of pudding, chopped mangos, and then dried coconut. Repeat the layering once more.

    4. Serve immediately.

    The crumble in this parfait is meant to replace a typical granola, but you would never know that it is simply using its three main ingredients of blueberries, coconut and macadamia nuts. There is a strong coconut flavor in this parfait with a hint of blueberry and pineapple with each bite, really bringing in the tropical experience.
