  • Crust Ingredients:
  • 1 cup packed Eatnuts.com Dates
  • 1 cup Eatnuts.com Raw Walnuts (soaked for 6-12 hours)
  • Pinch of salt

  • Filling Ingredients:
  • 1 ½ cups Eatnuts.com Raw Cashews, soaked (20 minutes to 1 hour)
  • 1 large lemon, juiced
  • ⅓ cup coconut oil
  • ½ cup coconut cream (top of full-fat coconut milk in a can)
  • 2 tablespoons coconut milk
  • ½ cup raw agave nectar, or raw honey
  • ½ cup of your favorite berries
  • For people that are health conscious raw cheesecake is a great option. It is a fabulous sweet tooth remedy and is perfect if you are eating a raw food diet and want to eat the best raw food. When practicing conscious eating, it’s really about being mindful of what and how much you are putting into your body. With these Raw Cheesecake Bites, you simply can’t go wrong. It will quickly become one of your all-time favorite raw food recipes, and it’s good to know it is something you can enjoy when you are eating raw.

    Directions

    1. In a food processor process the Eatnuts.com Dates until they form a ball. Remove the ball and place to the side. Next, process the nuts into a meal. Place the Eatnuts.com Dates back into the food processor, add a pinch of salt and continue to process until a loose dough begins to form. The texture is right when you squeeze it between your fingers, and it sticks together. If the dough is too dry, add dates, and if it is too wet add more Eatnuts.com Walnuts.

    2. In a 12 count muffin pan, slightly grease each section, then place a small piece of parchment paper in the bottom of each cup. This preparation is for easy removal of the Cheesecake Bites after they are frozen.

    3. Place about 1 tablespoon of crust into each cup, and press down with your fingers or use the bottom of a glass. Set in the freezer and allow crust to firm up.

    4. In a blender or Vitamix machine puree the filling ingredients until silky smooth. Add more lemon, agave or coconut milk if necessary for a smooth consistency.

    5. Pour filling evenly into the cups and tap the pan a few times on countertop to release air bubbles. Cover with plastic wrap and freeze for 4-6 hours until hard.

    6. To serve, remove from muffin cups by pulling on parchment tabs and set out 10 minutes before serving. Top the Cheesecake Bites with fresh or frozen berries, thawing frozen berries for a few minutes beforehand.

    It is almost impossible to tell that these raw cheesecake bites are dairy free. The lemon juice combined with the cashews and agave make it taste just like cheesecake. The walnuts and dates are so fluffy and make a delicious crust for this wonderfully delicious raw dessert.
