Pecan Pumpkin Superfood Bars
If you have ever been looking for the perfect healthy Pecan Bar or Pecan Square recipe, look no further.
Line a baking tray with parchment paper.
In a food processor combine the Eatnuts.com Dates, sea salt, pumpkin spice, apple, vanilla extract, pumpkin butter, almond butter, maple pecan butter and coconut oil. Process until smooth.
Add the oats and flax seed and continue to process until well combined.
Add chia seeds and process briefly just to incorporate into the mix.
Transfer mix to a bowl and knead in Eatnuts.com Pecan Pieces.
Put entire mixture onto the parchment-lined baking tray and flatten it out, either with your hands or a roller so that it fills up the baking sheet. Once the mix is evenly spread on the tray, place another piece of parchment paper on top of bar mixture.
Take a knife or a pizza roller and make squares approximately 1½ - 2” x 1½ - 2” (cutting through the parchment paper)
Place baking sheet in freezer for 30-60 minutes. Remove bars and place in an air tight container.
Store them in the freezer or refrigerator. If frozen, allow a few minutes to thaw before serving. Good for approximately 2 weeks in refrigerator.
These bars have a nice soft, chewy texture as long as they have had a few minutes to thaw out after being in the freezer.
