Ingredients List:

  • 2 bunches of kale
  • 1 garlic head
  • 2 bell peppers (red, orange or yellow)
  • 1-2 tablespoons olive oil
  • ½ cup Eatnuts.com Raw Cashews

  • 2 tablespoons nutritional yeast
  • ¼ cup olive oil
  • 1½ teaspoons salt
  • 2 tablespoons fresh squeezed lemon juice
  • 1-2 tablespoons apple cider vinegar or water
  • What’s a healthy snack to eat? These days the answer to that question can be confusing. People realize that the healthy snacks they've been eating in the past are not as healthy as they thought. Kale chips have made their way to the forefront as healthy snacks, however not all kale chips are made equally. Kale was once used only as a plate decoration, but today this whole food is eaten to satisfy our body's cravings in place of things like chocolate and sweets. Kale chips are easy to make and can be very delicious and nutritious healthy snacks.

    Directions

    1. Wash the kale thoroughly. Remove and throw away stems, then lay leaves out to dry on towels.

    2. Slice top off garlic pod and place on a cookie sheet along with the bell peppers. Cover the peppers with olive oil and pour 1-2 teaspoons of oil into the top of the garlic pod. Place in the oven and roast at 425 degrees for approximately 15 minutes. Reduce oven to 275 degrees while preparing the sauce, unless you'll be using a dehydrator for the final step for kale chips.

    3. Place roasted peppers, garlic squeezed from the pod, and all remaining ingredients in a Vitamix machine or blender. Blend until liquefied. The texture will be a semi thick paste.

    4. Place dried kale in a large bowl. With gloves on, use your hands to massage the kale with the paste until completely covered.

    5. If you are using a dehydrator, place kale on dehydrator sheets, and dry kale chips for 8 hours at 115 degrees. If using an oven, place kale on a lined baking sheet and bake for 15-20 minutes until the kale chips are dried and toasty, making sure they do not burn.

    These kale chips are salty and savory. The creaminess from the nuts and the nutritional yeast emulate a cheesy essence. You'll taste the slight sweetness from the peppers as well as the hidden tang from the apple cider vinegar and lemon juice, giving your taste buds an adventure with each bite.
