Ingredients List:

  • 1 cup salted butter, softened
  • 1 cup powdered sugar, divided
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon pure almond extract
  • 2 cups all purpose flour
  • 1 cup finely chopped Almonds
  • A holiday cookie classic in only six simple ingredients!

    1. Preheat your oven to 350 degrees farenheit.

    2. You will need a stand mixer, measuring cups, measuring spoons, a small bowl, and a cookie sheet.

    3. Begin by toasting 1 cup of finely chopped Almonds for about 5 minutes in a 350 degree oven, set aside. In your stand mixer, or with a handheld mixer, cream together 1 cup of softened butter, ½ cup of powdered sugar, 1 teaspoon of pure vanilla extract, and ¼ teaspoon of pure almond extract on medium speed with the whisk attachment.

    4. Switch from the whisk attachment to the dough hook, and add in 2 cups of all purpose flour in increments, scraping the bowl as needed, then add in 1 cup of Almonds, finely chopped and toasted, until well blended.

    5. Shape into 1" balls and bake for 10-15 minutes, or until the bottoms just begin to brown, on a parchment lined cookie sheet.

    6. After the cookies have cooled for 10 minutes, add remainder of powdered sugar into a small bowl and coat each cookie thoroughly. Place on wire rack to cool completely.

Tip: Add chopped Pecans, Pistachios, or any of your favorite Nuts!
