Baked Falafel Balls

Baked Falafel Balls are delightful and filling, wholesome and full of great nutrition. Eaten in pita bread or as a salad, they go excellent with some chopped tomatoes and romaine lettuce. If you also use our Creamy Cashew Tahini Dressing, you are guaranteed a healthy falafel recipe.
Directions
Preheat oven to 400 degrees.
Put all ingredients into a food processor except for the chickpea flour and baking powder.
Coarsely chop ingredients but do not puree.
Add baking powder and chickpea flour and continue to pulse into a dough.
If the dough appears too wet add more chickpea flour until it thickens up.
Form dough into large 1-2" balls, cover and place in refrigerator for about 30 minutes.
Line a baking sheet with parchment paper. Place dough balls on baking sheet. Do not worry about placing them too close together, as they will not expand much.
Bake for 25-30 minutes or until nicely browned, flipping them over halfway through.
Let baked falafel balls cool on the tray before transferring them to plates. Can be stored in refrigerator in an air tight container for 3-5 days.
