Baked Quinoa Cakes are one of those healthy protein sources that are also a gluten free, dairy free snack recipe. Gluten free snacks are healthy protein sources when you use quinoa, nuts, and seeds as in these Baked Quinoa Cakes. Healthy protein sources most commonly come from veggie protein foods since they do not contain the saturated fats that are commonly found in red meats.
Directions
Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
Mix the ground flax in water in a small bowl and set to the side for 3-5 minutes to thicken.
If using oats rather than oat flour, use a Vitamix machine with the dry container and turn the rolled oats into a fine flour texture.
Add all ingredients in a large bowl along with the flax mixture and cooked quinoa. Stir ingredients together until they begin to stick together. The flour acts as a binder so add more if needed.
Shape the mixture into ¼ cup cakes or patties using wet hands. Pack tightly so they hold together well, then place on the baking sheet.
Bake in oven for 15 minutes and then gently flip and bake for another 10 minutes until golden and firm.
Cool for 5 minutes before serving. Eat cakes as they are or enjoy with your favorite salad.
