Cashew Cauliflower Mash
Cauliflower Mash may become one of your all-time favorite recipes. Not only is it an easy cauliflower recipe but it is one of many healthy side dish recipes available. Since this cauliflower mash recipe calls for potatoes it is also considered a healthy mashed potatoes recipe. The addition of cashews brings in creaminess, good healthy fats, and density to an otherwise lighter side dish. This recipe for mashed cauliflower would also go well with Balsamic Roasted Brussel Sprouts or Roasted Brussels Sprouts with Almonds and Bacon.
Preheat oven to 375 degrees. In a large bowl combine cauliflower and potatoes and sprinkle with rosemary. Drizzle 1 tablespoon olive oil over the top and season with salt and pepper. Toss together and place on a baking sheet and set aside.
Slice off the top of the garlic bulb and place cut side up on foil. Drizzle remaining oil onto garlic bulb and wrap entire garlic bulb in foil. Crimp to seal at edges.
Place garlic on baking sheet with cauliflower and potatoes in oven and roast for 20 minutes or until vegetables are soft and tender. Let cool for a few minutes.
Squeeze the garlic from the peel and place in a Vitamix machine or blender. Add ⅔ of the cauliflower and potatoes, then cashews. Pulse several times and blend for a few seconds. (Add nutritional yeast at this time if you are making this a vegan recipe.) Place the rest of the mixture in a large bowl and mash with a fork. Combine the two mixtures and add coconut oil or butter and coconut cream. Add salt and pepper, then stir together. Place in a serving bowl and sprinkle with parmesan cheese. Garnish with rosemary and cashews.
