Ingredients List:

  • 1 onion, chopped
  • 1 bunch green onions, sliced
  • 3-4 garlic cloves, minced
  • ½ teaspoon turmeric
  • Salt and pepper to taste
  • 7 tablespoon olive oil or coconut oil, divided
  • 3 cups chopped celery
  • 1 bunch parsley
  • 1 bunch cilantro
  • 2 bunches of mint
  • 2 cups water
  • 2 vegetable bullion
  • 16 ounce can of kidney beans
  • 2 cups basmati rice or your rice of choice
  • 3 teaspoons salt

  • 1 lemon, juiced
  • This particular stew recipe is similar to a Persian cuisine called celery khoresh. However, it is a vegetarian version of the stew. Normally this Persian cuisine is prepared with lamb or chicken. However, we have made it vegetarian and included the health benefits of pine nuts to replace meat. There are several ways to cook celery in a variety of dishes, and you may find this one unique and delicious. The celery stew itself is made of a variety of herbs like parsley, cilantro, mint, and the flavoring of onions and garlic. This combination of vegetables bring in so many tantalizing flavors, and there’s a slight crunch from the celery that pairs well with the smooth and creamy pine nuts. Although you may find this celery stew quite satisfying on its own, we recommend serving it on top of a bed of Persian rice.


    1. In a Dutch oven or large cooking pot sauté onion, green onions, and garlic in 4 tablespoons of olive oil until they become translucent. Add turmeric, salt, and pepper. In a separate pan sauté celery in 1 tablespoon olive oil for 1 to 2 minutes.

    2. Cook rice in a rice cooker with 1-2 tablespoons of olive oil and 3 teaspoons salt. If you do not have a rice cooker you can use a pot. Cook the rice as instructed on package or if you prefer you can follow instructions for Persian rice at My Persian Kitchen.

    3. Clean herbs well and then remove stems. Chop herbs by hand or in a food processor.

    4. Add herbs, celery, and water to sautéed onion, garlic mixture. Add vegetable bullion and kidney beans. Cover and let cook on medium for about 30 minutes.

    5. Once you are done serve the rice with the celery stew on top and then top it with a handful of Eatnuts.com Raw Pine Nuts for each plate. Squeeze fresh lemon juice over the top.

    This celery stew has an array of flavors and textures. You can taste the cilantro, parsley, and mint flavoring with the slightly crisp and juicy celery as it has been soaking in the vegetable broth. The turmeric, onions, and garlic also add so much dimension and flavors. The pine nuts and rice add more texture for the eating experience. Enjoy the crunchy rice on the bottom, also known as tahdig in Persian cuisine, to get a nice extra crunch with the stew and rice.
