Light Chia Almond Chocolate Pudding is a divine chocolaty dessert. It will satisfy any chocolate lover’s cravings in a healthy way. Chia and Almond Milk or coconut milk make a fantastic pudding texture, and with the addition of chocolate, you’re simply in heaven.
Whisk together all ingredients (except chocolate chips) in a medium sauce pan.
Bring to a boil over medium heat, whisking constantly.
Whisk in chocolate chips until fully melted, approximately one minute.
Transfer into a bowl and place plastic wrap over the top of the pudding to prevent a top skin layer.
Once the pudding has cooled stir in chia seeds and mix thoroughly.
Let sit in refrigerator for 20 minutes until it thickens, then serve.
Each bite is a chocolate extravaganza. The thickness of the pudding is perfect with the texture of chia seeds which are almost like tapioca. It’s thick, creamy and full of chocolatey goodness.Almond Recipes, Healthy Recipes, Dried Blueberry Recipes, Dried Cranberry Recipes, Low-Fat Recipes, Pie and Dessert Recipes, Lactose-Free Recipes
