Creamy Broccoli Soup with Red Pepper Cream Sauce

  • ¼ cup coconut oil or avocado oil
  • 2 onions, chopped
  • 3-4 garlic cloves, minced
  • 2 cups chopped and peeled butternut squash
  • 4 cups broccoli
  • 5 cups vegetable stock
  • 1 teaspoon salt
  • ½ teaspoon fresh pepper
  • 2 cups fresh spinach
  • 2 cups dinosaur kale, cut into thin slices
  • 1 tablespoon dried chives or parsley
  • Pumpkin Seeds

  • Red Pepper Cream Sauce:
  • 1 garlic pod, roasted
  • 1 red bell pepper, roasted
  • Olive oil
  • ¼ cup Cashews
  • 3 tablespoons full-fat Coconut milk
  • 1 lemon, juiced
  • ½ teaspoon salt
  • There are so many ways to make veggie soup. You can make a chunky veggie soup or a creamy one, or better yet a combo veggie soup that is chunky and creamy. This Cream of Broccoli Vegan Soup is a healthy cream of broccoli soup. It is one of those simple broccoli recipes that you can make for almost any occasion and any time of year. Broccoli recipes are tasty in a variety of forms, and a healthy cream of broccoli soup that tastes good can be a great way to get more greens into your life.


    1. In a large pot over medium to high heat add coconut or avocado oil, onions, garlic, and butternut squash and sauté for 5-7 minutes. Add broccoli and continue to sauté for another 10 minutes until veggies become crisp-tender. Stir in the vegetable stock, salt, and pepper. Lastly, add spinach and kale. Cover, bring to a boil, and simmer for 20 minutes or until the veggies are tender.

    2. Preheat oven to 425 degrees on broil.

    3. Roast bell pepper and garlic: Cut the ends off of garlic pod and place on a small piece of foil. Drizzle olive oil into the garlic and wrap in the foil. Place garlic pod and red bell pepper in a baking dish, then drizzle olive oil over the top of the pepper. Put baking dish into the oven and roast for about 5-10 minutes.

    4. In a blender or Vitamix machine blend roasted garlic (squeeze roasted garlic from the pod), red bell pepper, and all remaining Red Pepper Cream Sauce ingredients.

    5. Serve Creamy Broccoli Soup with the Red Pepper Sauce drizzled over the top. Next top with chives or parsley and Pumpkin Seeds. Serve with crackers or bread.

    Although this soup is meat and dairy free it is extremely filling, flavorful and satisfying. The flavors of broccoli are very creamy with the added butternut squash. The texture of the pumpkin seeds on top of the soup pair well with the added greens, and the herbs bring in additional delicious flavor. The Roasted Red Pepper Sauce ties this entire meal together. You simply can’t help but want another bite! Serve this soup with bread, crackers, quinoa, rice, or simply eat it as is.
