Creamy Cauliflower Mash

Cauliflower mash is a great and healthy alternative to mashed potatoes because cauliflower is considered low carb. The low carb mashed cauliflower is one of those healthy side dishes for dinner and an easy dinner side. Cauliflower mash is also considered diabetic friendly due to its low carb count and is simply one of those amazing vegetable side dishes. Low carb mashed cauliflower is great for a variety of reasons and many occasions.
Directions
Steam cauliflower until soft, approximately 7-10 minutes.
Place steamed cauliflower into a Vitamix machine or food processor.
Add Eatnuts.com Raw Cashews, coconut oil and garlic.
Process until smooth and completely blended. If you prefer mashed cauliflower with a little more texture, leave out ¼ of the steamed cauliflower and add it at the end, using a fork to mix.
You can top the mashed cauliflower with gravy, coconut oil, or butter. Add salt and pepper as desired.
