Homemade Coconut Milk

When most people first hear of dairy free milk they may think of almond milk; however, coconut milk is also one of the non-dairy milk products that can be used in recipes as a dairy free milk. Recipes made with coconut milk are delicious, and since coconut milk is a dairy free milk, you can use it anytime you are looking for non-dairy milk products. It has a slightly different flavor and texture than almond milk, so you may find that recipes made with coconut milk come out better than almond milk when you need to cook with non-dairy milk products.
Directions
Use very warm water, but not boiling.
Put unsweetened dried coconut in a Vitamix Machine or high powered blender along with heated water.
Blend for 2-4 minutes until liquefied and creamy.
Pour into a nut bag and then squeeze out the remaining fiber and coconut.
If you prefer a two-step process, you can first pour it through a colander to remove the majority of the coconut first and then once again through a nut bag. When you separate the liquid, place it back into the Vitamix Machine or blender and mix it all together.
If you want to sweeten or flavor the coconut milk place back in your Vitamix Machine or blender and then add vanilla, dates, chocolate, strawberries or any flavoring of your choice. If using dates run it through the nut bag one more time to remove any last bit of fiber.
The milk will last for about 3-4 days in the refrigerator in an airtight container. Enjoy this healthy treat as your dairy free milk replacement.
The creamy coconut taste has a distinct sweetness and a pleasurable milkiness from the healthy coconut fat. Since it already has a natural sweetness, you almost do not need to add any sweetener for flavor.
