Kelp Hempseed Pesto Noodles

Ingredients List:

  • Pesto Sauce Ingredients
  • 3 tbsp Raw Cashews, presoaked for at least 20 minutes
  • 1 cup tightly packed basil
  • 1 cup tightly packed cilantro or parsley
  • ¼ cup hulled hemp seeds
  • ¼ cup water
  • 4 tbsp olive oil
  • 1 tbsp Pine Nuts
  • 1 tbsp Raw Almonds
  • pink salt and ground pepper to taste
  • 2-3 garlic cloves

  • Other ingredients
  • 1 cup baby spinach
  • ½ avocado
  • 1 Roma tomato chopped
  • Optional: a few basil leaves and nutritional yeast
  • Kelp Hempseed Pesto is a very simple, highly nutritionally dense and delicious addition to your meal when eating raw. If you are considering a raw noodle dish, it is always a great idea to add some pesto with avocado for the perfect creamy sauce.


    1. Drain kelp noodles and then cut the kelp into smaller pieces. Rinse and then soak in boiling hot water for 30 minutes.

    2. Throw all pesto ingredients into a blender or high powered blender like a Vitamix machine and blend until full smooth.

    3. Drain kelp noodles and add pesto sauce. Toss until evenly covered.

    4. Add chopped tomato, spinach, and extra basil leaves and toss.

    5. When serving, top the kelp noodles with avocado slices.

    6. Add optional nutritional yeast to make it cheesier or Walnut Almond Parmesan (recipe coming soon with link)

    This could either be a full entree or a side dish. Each bite is rich with healthy fats and flavor from the nuts combined with a light crunch from the kelp noodles. The tomato, spinach and avocado tie in the rest of the flavors, smoothing out the taste and giving it some variety.
