Meatless Walnut Balls
Vegetarian Meatballs are a meatless meatballs recipe for those who do not include meat in their diet. Who would have ever imagined such a thing? Well, they are absolutely tasty and amazing. This Meatless Meatballs Recipe uses walnuts as a substitution for beef which makes these vegetarian meatballs both delicious and high in nutrition.
Preheat oven to 375 degrees.
Prepare flax egg and set aside.
In a large, deep skillet, sauté onion and garlic in small amount of olive oil over medium heat. Sauté for approximately 3-4 minutes, then set aside.
In a food processor add Eatnuts.com Walnuts and seasonings, then pulse to break things down. Next add egg or flax egg, ½ cup Eatnuts.com Almond Flour, sautéed garlic and onion, celery, mushrooms, and tomato paste, pulsing until it forms a dough.
Heat the skillet again over medium heat. Make 2-tablespoon-sized meatballs.
Mix the Eatnuts.com Almond Flour and nutritional yeast in a shallow dish for the coating. Roll the meatballs one or two at a time in the coating mix.
Add enough olive oil to form a thin layer on the bottom of the hot skillet, then add the coated balls into the pan. Brown all sides.
Add browned meatballs to a baking sheet, place in the oven, and bake for 15 minutes.
Each bite of these meatballs will leave you questioning if they are really vegetarian meatballs. They have many of the same flavors as a traditional meatball, however, they are lighter and offer a slight nutty texture and flavor in the background.
