Mediterranean Omelette

Ingredients List:
A healthy goat cheese omelette to start the day with many different flavors and textures from several of the traditional foods found in many Mediterranean dishes.
Directions
In a small dish, mix together eggs, coconut creamer, salt and pepper to taste and half of the Italian seasoning.

Place sautéed mixture into a side dish and add more coconut oil to the plan on medium heat. Then pour in egg mixture and allow to slowly cook. As the egg begins to harden a bit, add the omelet mixture on top along with the goat cheese and fold over half the omelette.
You will know it’s ready when the eggs are fully cooked through, the goat cheese has melted and the outside has turned a golden brown.
