Paleo Peanut Butter Muffins

Directions
Preheat your oven to 350 degrees, and line a standard muffin pan with 12 paper cups.
In a medium bowl, combine all ingredients except for Eatnuts.com Peanuts and chocolate chips. Blend until batter is smooth.
Put peanuts in a bag and crush into small pieces with a cup.
Use a ¼ cup measuring cup to distribute batter evenly between all 12 muffin cups. Sprinkle the top with peanuts and chocolate chips.
Bake for about 15 -20 minutes or until muffins are slightly golden brown and firm in the middle. Allow them to cool for 15 minutes.
You can store on the counter in an airtight container for a few days or in the refrigerator for a week or two. The muffins also freeze well.
