Pecan Pumpkin Superfood Bars

Ingredients List:

  • 10 Medjool Dates (soaked in filtered water for 30 minutes and then drained)
  • ½ teaspoon sea salt
  • 1 teaspoon pumpkin spice
  • 3 cups diced sweet apples
  • 3 teaspoon pure vanilla extract
  • 2 cups rolled oats
  • 1 ½ cup ground flax seeds
  • ¾ cup chia seeds
  • ½ cup pumpkin butter
  • ¼ cup almond butter
  • ¼ cup Maple Pecan Butter
  • ½ cup coconut oil

    1. Line a baking tray with parchment paper.

    2. In a food processor combine the Dates, sea salt, pumpkin spice, apple, vanilla extract, pumpkin butter, almond butter, maple pecan butter and coconut oil. Process until smooth.

    3. Add the oats and flax seed and continue to process until well combined.

    4. Add chia seeds and process briefly just to incorporate into the mix.

    5. Transfer mix to a bowl and knead in Pecan Pieces.

    6. Put entire mixture onto the parchment-lined baking tray and flatten it out, either with your hands or a roller so that it fills up the baking sheet. Once the mix is evenly spread on the tray, place another piece of parchment paper on top of bar mixture.

    7. Take a knife or a pizza roller and make squares approximately 1½ - 2” x 1½ - 2” (cutting through the parchment paper)

    8. Place baking sheet in freezer for 30-60 minutes. Remove bars and place in an air tight container.

    9. Store them in the freezer or refrigerator. If frozen, allow a few minutes to thaw before serving. Good for approximately 2 weeks in refrigerator.

    These bars have a nice soft, chewy texture as long as they have had a few minutes to thaw out after being in the freezer. They are not too sweet and have lots of wonderful flavors from pumpkin spice, apple, sweet nutty pecan flavor and hint of flax to finish things off.
