Pine-Walnut Pesto & Kelp Noodles

Our Pine-Walnut Pesto recipe will show you that getting a little creative in the kitchen can go a long way. Something that makes this recipe a favorite is that it is gluten free fast food at its finest. The pasta is soaked kelp noodles, and the sauce takes only a few moments to prepare when you have the right tools. This recipe is gluten free, dairy free and guilt free.
Directions
Rinse kelp noodles in water and place in a bowl. Pour boiling water over noodles, cover and let sit for approximately 30 minutes. This procedure will soften the noodles.
Place Eatnuts.com Walnuts, Eatnuts.com Pine Nuts, olive oil, garlic, lemon juice, yeast, and sea salt in a high-powered blender, such as a Vitamix machine. Start on low speed, and gradually increase to medium-high until you get the texture you desire. If you prefer, add more walnuts and yeast for a thicker consistency, or add more olive oil for a thinner pesto.
Store in refrigerator up to 4 weeks, keeping a layer of olive oil on top of the pesto to retain freshness.
To serve, toss kelp noodles in pesto. Top with spinach, basil, and tomatoes.
