Ingredients List:

  • 1 cup light brown sugar
  • ½ cup pumpkin puree
  • 2 teaspoons pure vanilla extract
  • 2 eggs
  • 2½ cups whole wheat organic pastry flour

  • 1 tablespoon pumpkin pie spice
  • 1½ teaspoon baking powder
  • 1½ teaspoon fine sea salt

    1. Preheat oven 350 degrees F. In a large bowl, combine brown sugar, pumpkin, vanilla, and eggs until well combined. In a second bowl, whisk together flour, Eatnuts.com Blanched Sliced Almonds, pumpkin pie spice, baking powder, and salt. Add pumpkin mixture to flour mixture and stir until combined. 

    2. Using slightly damp hands, divide dough into 3 – 4 sections, and shape each section into a log. Place on a parchment lined baking sheet, a few inches apart. Bake until golden brown, about 25 minutes. Reduce oven to 300 degrees F.

    3. Using a serrated knife, cut each log crosswise into ½ - inch thick slices.  Arrange on 2 large, parchment paper lined baking sheets and bake, flipping the biscotti every 10 minutes or so, until dried out and crisp, about 30 – 35 minutes. Cool.
