Thai Spring Rolls with Almond Dipping Sauce

It is not just how often we eat but it is also important to consider what we are eating. Veggie rolls, healthy rolls, and these Healthy Spring Rolls are a good snack to have ready in your refrigerator for easy availability throughout the day. The almond dipping sauce is what makes these rolls so amazing. They are healthy rolls and easy spring rolls to prepare.
Directions
Make Thai Almond Dipping sauce by placing all ingredients in a blender or Vitamix machine and liquefy. Put in a small to medium size container, cover, and place to the side.
Cut all veggies into long thin slices, then place them on a plate to be put in rice paper wraps.
Put some warm water in a circular pie dish to soak rice wraps.
Shortly after soaking rice paper lay on a flat surface. Place your lettuce and herbs on the papers first, followed by the other veggies on top. Thin slices of tofu or shrimp are optional.
Wrap up the soaked rice paper with the filling like a burrito, folding the sides in and then rolling it up. Gently squeeze the wrap so it all sticks together. Store in an airtight container in your refrigerator.
When ready to eat serve rolls cold with dipping sauce.
Each bite is very crisp, light and full of flavor. The variety of flavors from the veggies brings forth sweetness, combined with the almond flavoring in the dipping sauce along with the Tamari and sweetness from the agave. The rice paper brings it all together in a grounding starch to the taste buds but remains light with the hydration of all the veggies and the density of the dipping sauce.
