Ingredients List:

  • 4 tortilla wraps of choice, regular or spinach
  • ½ cup Sun Dried Tomato Hummus or
  • Roasted Red Pepper Cashew Dip
  • 1 bell pepper, sliced
  • ¼ cup jicama, sliced
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 tomato, deseeded and sliced
  • 4 pieces of dinosaur kale
  • ½ cup Date Almond Quinoa Pilaf
  • Note: You may also add any vegetables you like.

    1. Lay each tortilla out flat and spread the Sun Dried Tomato Basil Hummus or Roasted Red Pepper Cashew Dip across the tortilla.

    2. Place ¼ of the veggies and Date Almond Quinoa Pilaf onto each wrap. Do not overfill the tortilla so you can easily roll it up.

    3. Fold in both ends of the wrap and roll it up. Use toothpicks if needed.

    4. Cut wrap in half and enjoy.
