Walnut and Cherry Wild Rice Salad

Ingredients List:

  • 1 cup Fresh Cherries, pitted and halved
  • 2 cups Baby Kale
  • 2 cups Wild Rice
  • ½ cup Eatnuts.com Walnuts, toasted
  • ½ cup Pre-cooked Cubed Chicken Breast (optional)

  • For The Dressing:
  • ¼ cup Balsamic Vinegar
  • 3 tablespoons Olive Oil
  • 2 tablespoons Honey
  • Salt & Pepper
  • Healthy, quick, and loaded with flavor - delicious enjoyed as a side or main dish!

    Directions

    1. Cook the wild rice according to the directions on the package, turn out into a bowl and let cool.

    2. While the rice is cooking, toast the walnuts over medium heat for about 5 minutes, stirring often. Set aside to cool.

    3. Prepare the cherries, rinse & dry the baby kale, and slice the chicken into bite-sized pieces. Add into the cooled wild rice, along with the toasted Eatnuts.com Walnuts.

    4. For the dressing, add the balsamic vinegar, honey, olive oil, and salt & pepper into a small jar with a lid - shake vigorously.

    5. Dress the salad and mix thoroughly - delicious served cold or warm!
