Monster Jar Sweet Almond Cakes
What better way to eat this deliciously moist almond cake but in spooky monster jars?!
Preheat your oven to 325 degrees F.
For this recipe, you will need 9-½ pint mason jars, chalkboard paint, chalk, an electric mixer, a cookie sheet, three bowls, measuring cups/spoons, spoons for mixing, and a sharpie paint pen.
While the oven is preheating, spread 1½ cups of Eatnuts.com Sliced Natural Almonds on a cookie sheet and place in the oven, stirring occasionally, until lightly toasted. Remove from the oven and roughly chop.
Empty the white cake mix, 1 package of vanilla pudding, ½ cup of milk, ¼ cup of vegetable oil, 1 teaspoon of pure almond extract, 4 room temperature eggs, and 1½ cups toasted/chopped Eatnuts.com Sliced Natural Almonds into your electric mixer. Blend at low speed until incorporated, then blend at medium-high speed for two minutes.
Once your cake batter is thoroughly mixed and fluffy, divide evenly into three bowls. Color one orange, one green, and one purple (or colors of your choice). Be sure to totally incorporate the color.
Fill each ½ pint jar with batter, filling just under halfway, about 3.5 tablespoons worth. Be careful to keep the sides clean, and wipe off any excess.
Place your jars on a cookie sheet and bake for 20-30 minutes. Watch very closely the last 10 minutes of cooking, the cakes brown very quickly and distort the bright color. Remove from the oven and let cool.
For the icing, blend in black food coloring with one jar of pre-made frosting. When the cakes are cool, you can decorate the jar with all kinds of silly faces with your sharpie paint pen and frost the cakes. Paint the jar lids with the chalkboard paint, and let completely dry before placing on top of the jars. Finish by writing spooky messages on the lids with chalk, and you're set!
