Light Chia Almond Chocolate Pudding is a divine chocolaty dessert. It will satisfy any chocolate lover’s cravings in a healthy way. Chia and Almond Milk or coconut milk make a fantastic pudding texture, and with the addition of chocolate, you’re simply in heaven.
Directions
Whisk together all ingredients (except chocolate chips) in a medium sauce pan.
Bring to a boil over medium heat, whisking constantly.
Whisk in chocolate chips until fully melted, approximately one minute.
Transfer into a bowl and place plastic wrap over the top of the pudding to prevent a top skin layer.
Once the pudding has cooled stir in chia seeds and mix thoroughly.
Let sit in refrigerator for 20 minutes until it thickens, then serve.
