Preheat oven to 350 degrees. Line 12 to 18 muffin cups with paper liners.
In a small bowl mix together flax meal and water. Allow to sit for at least 5 minutes to thicken.

In a medium bowl mash bananas, then stir in xylitol, vanilla, apple sauce, coconut oil, and flax meal with water.
Make a well in the middle of the dry ingredients. Pour wet ingredients into the well. Stir together until fully blended. The batter will be slightly thick.
Divide the batter between 18 muffin cups. If you desire larger muffins with a big domed crown divide batter into 12 muffin cups.
Bake for 18-25 minutes until a toothpick inserted into the top center comes out clean.
Remove muffins from the oven and allow to cool for 5-10 minutes. Transfer them into an air tight container and store for 3-5 days.
