  • Crust Ingredients:

  • 1 ½ cups all-purpose gluten free flour
  • ½ cup Almond Flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • ½ cup cold coconut butter

  • Topping Ingredients:

  • 1 cup coconut sugar
  • 1 cup maple syrup
  • ⅓ cup coconut oil
  • 1 ½ cup Cashews
  • 1 ½ cup Pecans
  • 3 tablespoons coconut cream

    1. Preheat oven to 350 degrees and line a 13x9 inch pan with parchment paper.

    2. To prepare the crust mix flours, salt, baking powder, and vanilla in a bowl.

    3. Cut coconut butter into the mixture until it becomes crumbly, then press into the bottom of the baking dish.

    4. Bake for 15 minutes or until golden brown.

    5. To make the topping combine coconut sugar, maple syrup, and coconut oil in a sauce pan. Bring to a boil over medium heat and continue cooking for 3 minutes.

    6. Remove from heat, then stir in the Cashews, Pecans, and coconut cream.

    7. Pour the nut mixture evenly over the bars, then bake for another 15 minutes.

    8. Cool, then cut into squares to serve.

    These Pecan Cashew Nut Squares are amazing! You will taste a sweet sugary crunch in each bite along with a beautiful texture from the pecans and cashews. There is also a softness of the nut squares that is perfection with a crunchy top that is similar to a crumbly coffee cake.
