For this recipe, you will need a saucepan, skillet, measuring cup & spoons, mixing bowl & spoon, cutting board, and knife.
Bring 1 cup of quinoa and 2 cups of chicken broth to a boil in a sauce pan for five minutes. Smash one clove of garlic and add to the quinoa, cover, remove from heat and let sit for 15 minutes. Remove the clove of garlic and transfer quinoa to a mixing bowl to cool.
In a skillet, toast ½ cup of Eatnuts.com Pine Nuts until golden and set aside. Prepare your Eatnuts.com Sun Dried Tomatoes, cherry tomatoes, olives, cucumber, onion, parsley and basil and add to the quinoa. Add 1 tablespoon of olive oil, Italian seasoning, vinegar, toasted pine nuts, crumbled feta and mix thoroughly. Salt and pepper to taste. Can be served warm, but best when chilled for at least two hours.
